Adapted from Vegan Cookies Invade Your Cookie Jar (goodreads) by Isa Chandra Moskowitz and Terry Hope Romero. Makes about a dozen larger cookies, or 20 smaller cookies.
Ingredients
- 1-2 very ripe medium banana
- 70g canola oil
- 100g sugar
- 1 teaspoon vanilla extract
- 115g all purpose flour
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 0.25 teaspoon ground cinnamon
- 160g rolled oats
- 65g toasted chopped walnuts or pecans
- 85g chocolate cut up into chunks, or chocolate chips (ideally these would be vegan)
Method
- Preheat oven to 180C. Lightly spray two baking sheets with oil, or line with parchment paper.
- In a mixing bowl, mash banana(s) well.
- Add oil, sugar, and vanilla, and mix.
- Add flour, baking soda, salt, and cinnamon. Mix until just moistened.
- Add oatmeal, walnuts, and chocolate chips. Using your hands or a spoon, mix well, ensuring oats are well-moistened. If dough is very slippery, add a little bit more flour.
- Using clean, wet hands, roll dough into balls slightly smaller than a golf ball (about 3cm in diameter). Flatten slightly and place 5 cm apart on baking sheet.
- Bake until lightly browned, 10-12 minutes. Remove from heat and allow to cool for two minutes, then transfer to a rack to cool completely. Store in an airtight container.
Notes
As I’m not vegan, I prefer recipes that don’t rely on egg replacement products such as flaxseed.
